fajita black bean soup
I came up with this recipe in an effort to prepare a low fat, hearty meal for my family. My 10 years old twins and 12 years old daughter really like the soup, which says a lot. There's truly a lot of flavor in this soup.

Ingredients For fajita black bean soup

2 1/2 lbbeef top round steak, boneless, sliced into thin strips

3 Tbspcanola oil

1yellow onions, chopped

1 Tbsphot hungarian paprika or chili powder

1 tspblack pepper

5 canseasoned black beans

16 ozmixed vegetables, frozen

32 ozcauliflower, frozen

salt to taste

mexican blend shredded cheese

tortilla chips
How To Make fajita black bean soup

1Under medium heat, in a large soup pot or Dutch oven, brown meat for 15-20 minutes Add onions and cook until tender. Add seasonings, adjust to taste.

2Add seasoned black beans and vegetables. Stir well. Lower heat to simmer for 1 hour.

3Add cauliflower and let simmer another 10-15 minutes. Top with cheese and serve with tortilla chips.
