Ingredients For dad's special beef-barley stew

  • 3 Tbsp
    flour
  • 2 lb
    cut up beef stew meat
  • 1/2 stick
    butter
  • 2 c
    beef broth
  • 1 c
    brewed black coffee
  • 1 tsp
    dried thyme
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 6
    potatoes, quartered
  • 6
    carrots, cut into chunks
  • 3
    onions, quartered
  • 1/4 c
    dried barley

How To Make dad's special beef-barley stew

  • 1
    Place flour in plastic, resealable bag. Add beef to bag and shake to coat. Melt butter in lg pot over med-high heat.

    Brown beef on all sides. Add broth, coffee, thyme, salt and pepper. Bring to a boil. Reduce heat to low.

    Add barley, simmer 1 hr. Add potatoes, carrots and onions. Simmer 1 more hour, stirring occasionally.
