I was on a mission to make a beef soup today, OMG it turned out so good! I dont usually use a recipe but I decided to write this one down because I want to make it again and again! It was sooooo delicious!

Ingredients For beef vegetable soup

2-3 lbbeef tip roast or equivalent

1 ccelery-chopped

6 lgcarrots, chopped

4 mdpotatoes, peeled and chopped

1sweet potato, peeled and chopped

1 lgonion, peeled and chopped
-
16 ozmushrooms, cut in half

1 lggreen pepper chopped
-
5 smred or yellow sweet peppers
-
1 qtcanned tomatoes
-
3bay leaves
-
1 Tbspmarjoram
-
1 Tbspbasil, dried
-
1 Tbspred pepper flakes
-
4 Tbspbeef bouillon
-
salt and pepper
-
1 qtwater
-
3-5 Tbspthai chili sauce
How To Make beef vegetable soup

1Chop all ingredients that need to be chopped.

2Spices all lined up and ready to add...or course you can add others to your taste!

3Layer in a crock pot. End with the meat and the spices on top.

4Cook on low 5 hours.

5Give the soup a good stir before serving. You want to mix all that deliciousness together!

6Serve with some chopped cilantro, a dollop of Ricotta Cheese and some good quality olive oil. YUM!
