beef stew jeanne's way
My Mother used to make a good pot of stew but I have taken her recipe and tweaked it until it is now my own. What I love about a stew is that you can clean out your fridge when you get overstocked with veggies. You can add pretty much anything you want but still use the basic broth ingredients. And what could be better than a hearty one pot meal that only requires a nice hot and crunchy French Roll by its side!

Slow Cooker Crock Pot
Ingredients For beef stew jeanne's way

2 lbbeef stew meat
-
18 smred potatoes, sliced in half
-
2 stalkcelery, sliced
-
1 lgyellow onion, sliced
-
2 cbaby carrots
-
2 lghandfuls fresh green beans, trimmed & split in half
-
1 - 1 lb. canwhole tomatoes, puréed, i used hand blender
-
1-14.5 oz. candiced tomatoes w/basil, garlic & oregano
-
salt to taste
-
pepper to taste
-
1 Tbspsummer savory, optional
-
seasonings of your choice
-
1/4 ccanola oil, add more if needed
-
1/4 cflour for roux.
How To Make beef stew jeanne's way

1In a skillet warm Canola Oil over medium to medium high heat.

2Season stew meat with Sea Salt and pepper.

3Place meat in skillet in stages (don't overload skillet) and brown. Turn over and sauté until browned.

4Place browned meat in a 5 quart or larger slow cooker.

5Add flour to oil to make a roux and stir scrapping bottom of pan with spoon to loosen dredgings.

6Cook roux until it is golden brown in color.

7Add enough water to roux to make a gravy like consistency. Bring to boil and cook until thicker.

8To gravy, add puréed tomatoes and diced tomatoes. Season with salt and pepper, Summer Savory (optional) and any seasonings of your choice.

9Add all veggies to meat.

10Add gravy sauce to meat and veggie mixture.

11Stir all ingredients until well blended.

12Cover slow cooker with lid and cook on low for 7 to 8 hours

13Enjoy a delicious pot of Beef Stew!

14Hint: If you get a late start on your stew then cook on high for two hours and turn down to low for the remainder of cooking time. Picture is from night 2 leftovers when I added frozen peas!
