An excellent alternative to the standard turkey soups that tend to get made after a holiday feast, this will remind your family and guests of warmer times! This version is mild enough that the kids have no problems with it. If you prefer things spicy (as I do!) then you can add your favorite form of heat in the pot or at the table! Enjoy!!

2 cturkey pieces

2 Tbspolive oil

4 clovegarlic, crushed

1 lgonion - chopped

1red pepper - chopped

2 canrotel tomatoes and chiles (10 oz mild)

2 canpinto beans - drained

1 candiced tomatoes (14 oz)

1 lbfrozen corn kernels

1 canchopped green chiles (4.5 oz)

2 tspgreen chile powder (mild)

1 Tbsphatch chile powder (mild)

2 Tbspsalt

2 Tbspsugar

1 Tbspcumin
-
2 tspdried cilantro

1 tspground black pepper

1/2 clime juice

1 bagtortilla chips

8 ozshredded cheddar
How To Make turkey tortilla soup

1Heat the olive oil in a skillet. Saute the Garlic, Onion and Red Pepper for 4-5 mins - set aside

2In a large soup pot, combine Stock, Turkey, all canned ingredients, sauteed vegetables, lime juice and all seasonings/spices.

3Simmer for 1 hour

4Serve over crushed tortillas and garnish with shredded cheddar. Enjoy!!
