complicated bean soup

WHen I was doing Daycare my littles called this complicated bean soup....I really dont know why! Maybe their Mom called it that but the name always pops into my head when I make this type of soup. Today I really wanted to make Split Pea Soup with my wonderful left over ham bone...alas, not a split pea in the house! Then I saw my stash of beans...just the ticket, and OH MY is it GOOD!

Ingredients For complicated bean soup

  • lots
    dried mixed beans
  • 3 qt
    water
  • 1 lg
    ham bone with some meat
  • 1 bag
    little carrots
  • 1 c
    chopped celery
  • 1
    onion, diced
  • 1/2 tsp
    peppercorns
  • 2
    bay leaves
  • LATER YOU ADD:
  • 1 can
    diced tomatoes with green chilies
  • 1 c
    chopped flat leaf parsley
  • olive oil

How To Make complicated bean soup

    Put 3 quarts of water into your crock-pot and turn it on the high setting.

    Put the ham bone into the water.
  • 3
    Rinse the beans in warm water and pour off any floating things. Do this a few times until the water runs clear. Add the beans to the water in the crock pot.

    Add the chopped celery and the carrots.
  • 5
    Add the chopped onion, peppercorns and the bay leaves.

    Cook on high for an hour and turn the crock pot to low and cook an additional 5 hours.

    Take the ham bone and meat out and let it cool. Get the bones out and chop the meant into small pieces. Add them back to the soup.

    Add the can of tomatoes with chilies and the chopped parsley. Turn the crock pot to high and cook for 15 minutes until heated through.

    Serve with a drizzle of olive oil and some soft corn tortillas to soak up the soup or some corn chips.
