My friend, Mark, shared some of his Polish family recipes with me, and this was one of the first, but definitely not the last!

Ingredients For zupa truskavkowa (strawberry soup)

  • 2 qt
    strawberries, washed and diced
  • 1 c
    sugar
  • 4
    egg yolks, coddled
  • 4 c
    water, boiled and cooled
  • 1 1/2 c
    sour cream
  • croutons

How To Make zupa truskavkowa (strawberry soup)

    Puree strawberries. Mix with sugar and water. Add yolks and sour cream. Chill in freezer at least 30 min. Serve very cold with croutons after the main course.

    The traditional recipe uses uncooked egg yolks, coddling them adds to the food safety.
