The first time i canned this i labeled it curry soup.Just to see if children could tell it had zucchini in it.Answer NO. served with thick sliced toasted french bread it's a meal

Ingredients For zucchini /rice soup

9 lbzucchini chopped in 1/2 inch pieces

4 conion chopped

4 clovegarlic chopped fine

1/2 cmargarine
-
20 cchicken broth
-
1 crice white long grain

2 Tbspcurry powder
How To Make zucchini /rice soup

1Trim & discard ends of zucchini chop .In a large stock pot saut'e zucchini,onion & garlic in margarine until tender.Add broth bring to a boil add rice & curry powder lower heat.Simmer for 25-30 mins.nice soft veggies in small batches puree soup. in blender.Return to pot add salt,pepper to taste boil 5 mins. before filling jars.

21/2 inch headspace in jars makes 7 quarts.Process in pressure canner at 10lbs of pressure for 40 mins.This makes a nice soup some times we add alittle water when we warm it
