2 Tbsprice vinegar

6 cvegetable stock

6 ozramen noodles

1 smjalapeno seeded and diced

1/2 lgred onion sliced

8 ozshiitake mushrooms sliced

1 bunchenoki mushrooms trimmed

1 bunchscallions diced

1/2 ccilantro chopped
How To Make vegetable miso ramen

1Place the miso paste, rice vinegar, and broth into large pot. Bring to a boil and let miso paste dissolve. Reduce to a simmer. Add the ramen noodles and cook 3 minutes.

2Add the remaining ingredients except cilantro. Simmer 3 more minutes. Ladle into bowls and garnish with cilantro.
