Ingredients For vegetable gumbo

1chopped onion

1 Tbspbasil or rosemary, minced

2 Tbspfresh parsley, minced

1/4 tsppaprika

1/4 tsphot sauce of your choice

1/2 cwater
-
1/2 cwhite grape juice
-
1 tspvegetable bouillon granules
-
1 lbtomatoes, fresh or canned

1 lbokra, sliced, fresh, frozen

1garlic clove, minced
-
2stalks celery, diced
-
1/2green pepper, diced
-
vegetable cooking spray
How To Make vegetable gumbo

1In a large heavy stew pot, place bouillon and 1/2 cup white grape juice, onion, green pepper, celery garlic, cook until tender, 5-7 minutes.

2Add other ingredients, cook over low heat, stirring occasionally to keep from sticking to bottom.

3Cover and simmer gently until corn and okra are done.

4(Or simmer in crockpot 6-7 hours.)

5Cut fresh corn from cob with a sharp knife, then scrape the remaining corn off the cob.
