Ingredients For udon noodle soup

1 Tbspolive oil

1/2 mdonion, finely chopped

1/4 lgred pepper, finely julienned

1/4 lgorange pepper, finely julienned

1 mdjalapeño pepper, seeded, ribs removed and finely julienned

1 mdcarrot, shredded
-
1 1/2 Tbspfresh ginger, minced
-
2 lgcloves garlic, pressed

1 Tbspsesame oil
-
1 cmushrooms, washed and sliced
-
1 cchar siu (chinese bbq pork), roughly chopped
-
4 clow-sodium chicken broth
-
1/4 tspred pepper flakes, or to taste

1 Tbsphoisin sauce
-
1 Tbsplow-sodium soy sauce or tamari
-
1 tspfish sauce
-
7 ozudon noodles, cooked according to package directions

1 cbean sprouts, washed and drained, for garnish
-
1 lggreen onion, sliced diagonally into 1-inch pieces, for garnish

1/4 cpeanuts, coarsely chopped, for garnish
-
1 Tbspfresh cilantro, for garnish

2-4 lglime wedges, for garnish
How To Make udon noodle soup

1In a large saucepan over medium, heat olive oil. Add onion and sauté for 2 minutes. Add red and jalapeño peppers and sauté for 3 minutes. Add carrot and cook for 2 minutes. Add garlic and ginger and sauté for 1 minute. Add sesame oil, mushrooms and soy sauce; sauté for 2 minutes. Add broth, pork, red pepper flakes, hoisin sauce and fish sauce. Bring to a simmer then reduce heat down to low; cover and simmer for 20 minutes.

2Place cooked udon noodles at the bottom of two large serving bowls. Ladle the soup over the noodles and garnish with bean sprouts, green onions, cilantro, peanuts and lime wedge.
