Very easy to make. Keeps well in the refrigerator, but does not freeze well.

Ingredients For tortellini soup

  • 2 tsp
    chopped garlic
  • 1/2 sm
    onion, chopped
  • 2 Tbsp
    vegetable oil
  • 1 lg
    can chicken broth (3 lbs. 1.5 ozs.)
  • 1 sm
    package of chopped frozen spinach
  • 2 Tbsp
    dried basil
  • 1 pkg
    three cheese tortellini
  • 1/2 can
    parmesan cheese

How To Make tortellini soup

  • 1
    Cook garlic and onion in oil until translucent.
  • 2
    Add chicken broth, tomatoes, spinach and basil. Cook until spinach is tender.
  • 3
    Shut off heat and add tortellini.
  • 4
    Keep pot on burner until tortellini is done.
  • 5
    Add parmesan cheese
