Ingredients For tomato basil soup

  • 3 Tbsp
    butter
  • 4
    large ripe tomatoes, peeled, seeded and chopped
  • 1 c
    slightly packed chopped fresh basil
  • 1
    large onion,sliced
  • 3/4 tsp
    sugar
  • dash
    salt and pepper
  • 1 3/4 c
    chicken broth

How To Make tomato basil soup

    In saucepan, melt butter over med. heat. Add onion and cook until onion is transparent, stirring frequently. Stir in tomatoes, basil, sugar and salt and pepper. Heat to boiling, stirring constantly. Reduce heat and simmer, covered 10 min. cool slightly. Pour into a blender and puree until smooth. Return to pan and stir in broth. Heat until steaming.
