Got this from my sister-in-law, who got it from someone else, etc. Another name for it is Velveeta Chicken Tortilla Soup (minus the tortillas). You could use any meat. I prefer the Costco Kirkland canned chicken.

Ingredients For texas busy day soup

  • 1 lb
    hamburger, browned and drained (or 3 lg cans chicken breast meat w/liquid)
  • 1 can
    28 oz - diced tomatoes w/liquid
  • 1 can
    15.25 oz - rotel tomatoes w/mild jalapenos or chilies w/liquid
  • 1 can
    large whole kernel corn or 2 -15 oz cans, drained
  • 1 can
    14 or 15 oz can pinto beans, drained
  • 1 can
    14 or 15 oz can black eyed peas, drained
  • 1 Tbsp
    chili powder
  • 1 box
    (32oz) original velveeta cheese, cubed

    Combine first 7 ingredients and warm up. Add cubed Velveeta a little at a time, to keep it from burning, and cook on low heat until Velveeta is completely melted.

    This makes a really large pot of soup. I used my crock pot on low. If you want it a little runny, use more liquids from the ingredients. If you like it a little thicker, use less liquid from the ingredients. It also tends to be a little salty, so you can use no salt added vegetables and low fat Velveeta.
