I found this in a low fat, quick and healthy cook booklet. It sounds good. Can't wait for peaches to be in season to try this one. Will be great as an appetizer for a brunch on a hot summer day.

How To Make sunny peach soup

1process all soup ingredients in food processor or blender intil smooth and thick

2pour into a large covered container and chill at least 30 minutes.

3pour into individual bowls, topped with a fresh mint sprig.
