I found this in a low fat, quick and healthy cook booklet. It sounds good. Can't wait for peaches to be in season to try this one. Will be great as an appetizer for a brunch on a hot summer day.

    peaches, peeled and chopped
  • 2 c
    cantalope chunks
  • 1/4 c
    lowfat buttermilk
  • 1/4 c
    orange juice
  • 1 tsp
    honey
  • 1/8 tsp
    nutmeg
  • 4
    sprigs mint, for garnish

How To Make sunny peach soup

    process all soup ingredients in food processor or blender intil smooth and thick

    pour into a large covered container and chill at least 30 minutes.

    pour into individual bowls, topped with a fresh mint sprig.
