spicy sausage & tortellini soup

I love spicy Italian sausage, but of course, you could make this milder by using regular sausage and reduce the hot sauce, cayenne and pepper flakes.

Ingredients For spicy sausage & tortellini soup

  • 12 oz
    hot italian sausage, either bulk or removed from casings
  • 1 c
    onion, diced
  • 3 clove
    garlic, minced
  • 3 Tbsp
    flour
  • 1 Tbsp
    basil, minced (or 1/2 tablespoon dried)
  • 1/2 tsp
    oregano, dried
  • 1- 2 tsp
    hot sauce, your favorite brand
  • 1 Tbsp
    dijon or spicy mustard or your choice
  • 1/8 tsp
    cayenne pepper, or to taste
  • 1/8 tsp
    red pepper flakes, or to taste
  • 1 c
    1/2 and 1/2
  • 5 c
    chicken broth
  • 2-3 c
    kale or spinach
  • 2 c
    tortellini, dried or refrigerated
  • salt and pepper, to taste

How To Make spicy sausage & tortellini soup

  • 1
    Crumble sausage and cook with onion in a large pot until onions are translucent and sausage is cooked through.

    Add garlic and cook for an additional minute, or until garlic is fragrant. Sprinkle with flour and cook for another minute or so.

    Add the herbs, mustard, hot sauce and pepper.

    Add broth, scraping bottom of pan. Bring to a boil, then reduce to a simmer.

    Add tortellini following package directions. Add kale or spinach for the last few minutes until wilted.

    Add 1/2 and 1/2, stir until warmed. Do not boil! Taste for salt and pepper.
