Ingredients For savoury sausage vegetable soup

1link of beef sausage (i used eddy's) sliced thin

1 1/232 oz. cartons of chicken stock

1 can14.5 oz fire roasted diced tomatos

1 bag12 oz. small frozen sweet corn
-
1 bag12 oz. small frozen cut carrots
-
1 can15 oz. drained kidney beans, canned
-
1 smchopped onion ( eye ball it)

1 bag1.5 lb. petite red potatoes or 4 or 5 med. size cut into fours

2 Tbspolive oil
-
1 1/2 tspitalian seasoning
-
2 tsppaprika
-
1 tspgarlic salt or more to taste
-
1 tspsalt or more to taste (the stock is salty)

2 tspblack pepper
-
2 Tbspparsley flakes
How To Make savoury sausage vegetable soup

1Saute onion in olive oil, add seasoning, canned tomatoes and 1&1/2 cartons of chicken stock. Mix and heat on medium high heat and stir occasionally.

2Add sliced sausage, beans and thawed veggies. I prefer frozen veggies and I keep the freezer stocked for cooking different recipes. Use whatever you have, it all taste good.

3Cover with lid and cook on low heat stirring occasionally for 35 - 40 min.

4Options: noodles, rice, cabbage, cauliflower, zucchini or squash. French bread is always good with any soup or stew dish.
