Ingredients For sausage, kale and sweet potato soup

  • 1 lb
    sweet italian turkey sausage (i like jennie-o lean)
  • 8 c
    chicken broth, low salt
  • 2 lg
    sweet potatoes, peeled and diced small
  • 3 c
    chopped kale
  • 1 c
    canned cannellini bean, drained and rinsed
  • 1 lg
    carrot, peeled and diced small
  • 1 stalk
    celery, diced small
  • 1 c
    cooked brown rice
  • 1/2 sm
    red bell pepper, diced small
  • 1/4 c
    white wine
  • 1/2 Tbsp
    sugar
  • 1 tsp
    turmeric, ground
  • 1 tsp
    oregano, dried
  • 1 Tbsp
    parsley flakes
  • 1 Tbsp
    minced onion
  • 1/2 tsp
    minced garlic
  • 1/4 tsp
    nutmeg
  • 2 Tbsp
    olive oil

How To Make sausage, kale and sweet potato soup

    Heat oil in a skillet.
  • 2
    Add the onion, garlic, celery and bell pepper and saute 5 minutes.

    Remove casing from the sausage. Cut sausage into slices.

    Add slices to the skillet and brown.

    Place the sausage, onion, garlic, celery and peppers in a large soup pot.

    Add the broth, wine and sugar and bring to a low boil.

    Add the carrots,sweet potatoes, beans and spices.

    Reduce heat and simmer stirring occasionally, for 10 minutes or until carrots and potatoes are soft.

    Add the kale. Simmer for 10 minutes until tender.

    Add the rice and cook 5 minutes until heated through.
