Ingredients For sausage, kale and sweet potato soup

1 lbsweet italian turkey sausage (i like jennie-o lean)

8 cchicken broth, low salt

2 lgsweet potatoes, peeled and diced small

3 cchopped kale
-
1 ccanned cannellini bean, drained and rinsed
-
1 lgcarrot, peeled and diced small
-
1 stalkcelery, diced small
-
1 ccooked brown rice
-
1/2 smred bell pepper, diced small
-
1/4 cwhite wine
-
1/2 Tbspsugar
-
1 tspturmeric, ground
-
1 tsporegano, dried
-
1 Tbspparsley flakes
-
1 Tbspminced onion
-
1/2 tspminced garlic
-
1/4 tspnutmeg

2 Tbspolive oil
How To Make sausage, kale and sweet potato soup

1Heat oil in a skillet.

2Add the onion, garlic, celery and bell pepper and saute 5 minutes.

3Remove casing from the sausage. Cut sausage into slices.

4Add slices to the skillet and brown.

5Place the sausage, onion, garlic, celery and peppers in a large soup pot.

6Add the broth, wine and sugar and bring to a low boil.

7Add the carrots,sweet potatoes, beans and spices.

8Reduce heat and simmer stirring occasionally, for 10 minutes or until carrots and potatoes are soft.

9Add the kale. Simmer for 10 minutes until tender.

10Add the rice and cook 5 minutes until heated through.
