My husband loves the sausage and lentil soup at Carrabba's so I decided to make it at home. I searched around and found 3 or 4 different recipes...this is a combination of those recipes and a couple of tweaks of my own. It's a great winter time meal. And my husband likes it better than Carrabba's soup!

Ingredients For sausage and lentil soup

1 lbhot italian sausage

1 lgonion, chopped

1stalk celery, chopped

2 lgcarrots, chopped

1 smzucchini, chopped

8 cchicken broth
-
2 candiced tomatoes, undrained (14-1/2 oz cans)

2 clovegarlic, minced
-
1 tspsalt
-
2 cdry green lentils, rinsed

3/4 tspblack pepper
-
1/2 tspred pepper flakes
-
1/2 tspdried oregano
-
1/2 tspdried thyme
-
1/2 tspfennel seeds
-
1bay leaf
-
1/2 cparmesan cheese, freshly grated
How To Make sausage and lentil soup

1Brown sausage; drain well.

2In a large pot, combine all ingredients except parmesan and bring to a boil.

3Reduce heat; cover.

4Simmer for about 1 hour or until the lentils are tender. Add water, if necessary, for desired consistency.

5Sprinkle with parmesan cheese and serve.
