This soup is so easy and fast. Everyone I have shared this recipe with has absolutely loved it, especially MEN!

Ingredients For ravioli soup

  • 8 0z.
    sweet italian sausage, casing removed
  • 1
    clove garlic
  • 2-13-3/4oz can
    chicken broth
  • 2 c
    water
  • 1- 9oz pkg
    frozen cheese raviolis, (no need to thaw)
  • 1-15oz can
    white beans (or chick peas if you like them yuk !)
  • 1-14. 5oz can
    stewed tomates, italian style
  • 1/4 c
    dijon mustard, yes 1/4 cup!
  • 1/2 tsp
    dried oregano
  • 1/4 tsp
    pepper
  • 1 bunch
    fresh spinach, torn
  • fresh grated parmesan

How To Make ravioli soup

  • 1
    In 4 qt. pot, brown sausage and cook garlic together until tender, about 5 minutes. Drain fat if any and set meat mixture aside. In same pot, over medium heat, cook chicken broth and water to boil. Add ravioli, cook for 4-5 min. til tender. Stir in beans, stewed tomatoes, sausage mixture, mustard, oregano and pepper. Heat through. Stir in spinach and cook until just wilted, about 1 min. Ready to serve topped with grated parmesan cheese and of course Garlic cheese bread or cheese sticks. ENJOY!
