Ingredients For ratatouille

  • 1/2 lb
    Italian pork sausage
  • 1/2 lb
    ground beef
  • 1/2
    red onion
  • 3-4 clove
    garlic
  • 3-4 tsp
    italian seasoning
  • 1 can
    tomato paste (6 oz)
  • 1
    small-medium zucchini, sliced
  • 1
    small-medium summer squash, sliced
  • 1 sm
    green bell pepper, sliced
  • 1 slice
    red bell pepper, sliced
  • 1 - 2 c
    chicken broth
  • 3-4 dash
    Parmesan cheese, grated
  • 1 box
    Ditalini pasta (optional)

How To Make ratatouille

    In a saucepan, brown the sausage and beef along with the onion, garlic, and spices. Drain the grease and set aside
  • 2
    In another pan, brown the tomato paste on medium heat for 4-5 minutes. Add broth and whisk into sauce.

    Stir in meat, chopped vegetables, and more broth if needed. Simmer until veggies are tender.

    Serve over ditalini pasta or as is. Sprinkle with Parmesan cheese.
