Great for supper in the fall along with some crusty bread and a salad. Also a good "starter" for Thanksgiving dinner.

Ingredients For pumpkin soup

  • 3 Tbsp
    butter, room temperature
  • 1 md
    onion, finely chopped
  • 5 c
    chicken stock
  • 1 tsp
    salt
  • 1/2 - 1 tsp
    freshly ground pepper
  • 16 oz
    canned pumpkin
  • 1/2 c
    heavy cream
  • 1/4 c
    toasted pumpkin seeds

How To Make pumpkin soup

    In large, heavy sauce pan, melt butter. Add onion and cook over medium heat until onion is soft. Add broth, salt and pepper. Bring to a boil. Add pumpkin, combine thoroughly. Lower heat, cover; simmer for 45 minutes. Add cream and heat through. Serve immediately. Top with toasted pumpkin seeds, if desired.
