I wanted potato soup since it was cold outside. I read quite a few recipes, but nothing jumped out at me, so I "winged" it. My dad said he wasn't very hungry, so " just give me a little". He went back for more,twice! Then he said my stepmom prided herselfon her potato soup, but mine was the best he had ever eaten! High praise, indeed! Even hubby had 2 full bowls & he thinks soup alone doesn't count as a meal! LOL!

Ingredients For potato soup my way

7 mdpotatoes, peeled & diced

2 cchicken stock
-
4-5 cwater
-
1/2 ccelery, diced small
-
1 mdonion, diced small

1 tspgarlic salt
-
1/2 tspblack pepper
-
2 cleftover mashed potatoes
-
1 pkgcountry gravy mix
-
3 slicecooked bacon, chopped
-
4 ozvelveeta, diced
How To Make potato soup my way

1Put potatoes, chicken stock, onions, seasonings in a large pot. Add water to cover potatoes well.

2Bring to a boil, then reduce heat to medium low. Simmer for about an hour.(Not necessary, can just cook until potatoes are done.) Do not drain.

3Add 1/2 cups water. Return to a boil. Mix 1/2 cup water with gravy mix & stir into potatoes.

4Add leftover mashed potatoes & stir to combine. Add cheese & bacon.Reduce heat to simmer.

5Cook until desired consistency.
