Ingredients For potato sausage cheese soup (using leftovers)

1shallot, minced

1/2 cshredded carrots

2 cchicken broth

2 ccold mashed potatoes

1 cmilk

2 ccheddar cheese, shredded

6breakfast sausage links, cooked and sliced into "coins"

1 Tbspchives, dried

salt and pepper, to taste
How To Make potato sausage cheese soup (using leftovers)

1Place shallot and carrots into a large saucepan and add broth. Bring to a boil; turn down to a simmer and cook 5 minutes.

2Stir in potatoes, milk and cheese. Stir until cheese is melted. Add more milk if too thick.

3Stir in sausage "coins" and dried chives and simmer until heated through. Season with salt and pepper.
