My friend Bethan from Wales sends me recipes all the time and in this batch was a recipe for Nettle Soup. We grow a huge patch of nettle every year and this recipe is perfect. This amazing green is sometimes called "Wonder Weed". Here's a link if you're interested in it. Ingredients For nettle soup

5.3 ozstinging nettle leaves

2 Tbspcoconut oil
-
1 lgonion, peeled and cut up

2 clovegarlic, peeled and chopped

1 lgleek, cleaned and cut thin, discard the green parts

2 lgcelery stocks, chopped

2 Tbspquinoa or white rice, such as basmati
-
1 qtstock, veggie or chicken
-
sea salt and fresh cracked black pepper to taste

6 Tbspplain yogurt

1 smbunch ofg chives cut small to garnish the soup (optional)
How To Make nettle soup

1Pick over the nettle leaves and toss out any stems, they are tough and don't taste too good.

2Melt the coconut oil in a large pot over med-low heat. Add the onion, leek, celery and garlic and cover and sweat for 10 minutes, stirring a few times throughout the process. You want the veggies soft but not brown.

3Add the rice and stock and bring up to a simmer and cook for an additional 10 minutes.

4Add the nettle and stir it in and simmer for an additional 5 minutes. Season with salt and pepper.

5Puree the soup in a blender in two batches, or use a stick blender and puree the soup right in the pot.

6Serve in warmed bowls with a large dollop of yogurt on tope. Sprinkle with chives if desired.
