On a cold night, this is the ticket to a warm tummy! I finally got my "cooking mojo" back with this creation. I hope you all can find the ingredients-especially the soy/vegetarian chorizo. If you have to...buy a meat one that is soft to make this work for flavor is very important in this recipe.This is easily found in So. Calif, but not sure if is available everyplace in the USA.

Ingredients For my own french pork/chorizo soup/stew

  • 2 can
    beef broth
  • 1 can
    french onion soup
  • 1 pkg
    dry onion soup mix
  • 2/3 c
    chopped onion-red/white or yellow
  • 1-2 lb
    pork stew meat
  • 1 tube
    soy chorizo-use a meat variety if this is not available
  • 4 md
    peeled potatoes cut into 1"-2" pieces
  • 2-4 lg
    carrots-chopped into 1"2" pieces
  • 1 bunch
    (heart) of celery-chopped into 1"-2" pieces
  • 2 Tbsp
    minced garlic
  • 1-2 can
    yellow & white corn-or one of each
  • 1 c
    nice red wine-(merlot is great)
  • 1 tsp
    montreal steak seasoning
  • 1 tsp
    ground cumin
  • 1 tsp
    dried oregano
  • olive oil as needed
  • cilantro, sour cream, grated cheese for topping

How To Make my own french pork/chorizo soup/stew

    In a heavy Dutch oven: 1. Add enough olive oil to nearly coat the bottom of the pan

    2. Brown the pork…then add the chopped onions
  • 3
    3. Add the entire tube of SOY chorizo (it is soft-not made of meat by-products)

    4. Add broth, canned onion soup & wine
  • 5
    5. Add remainder of ingredients
  • 6
    6. Bring all to a boil-then turn down the heat to medium/low and cook for 2-4 hours-Stir occasionally & taste
  • 7
    7. Serve with cilantro/sour cream/grated cheese and a warmed loaf of bread of your choice
