Don't skimp out on the meatballs, these are so good you don't want to use frozen ones! This is a hearty, wonderful soup.

Ingredients For meatball minestrone

  • 1 lb
    hamburger
  • 15 oz
    tomato sauce
  • 2 1/2 c
    water
  • 15 1/2 oz
    kidney beans with liquid
  • 1/2 tsp
    oregano
  • 1/4 tsp
    thyme
  • 1 c
    sliced celery
  • 1 c
    baby carrot slices
  • 1/2
    head cabbage
  • 1 md
    onion, sliced

How To Make meatball minestrone

  • 1
    Combine beef with dash pepper, garlic, onion, season salt and accent. Roll into small meatballs and brown in skillet--DO NOT cook through. Place remaining ingredients in stockpot. Leave cabbage sliced slightly thick. Add meatballs and simmer until completely cooked.

    If desired, add 1/4-1/2 c elbow macaroni about 10 min before you serve.
