You can use any kind of steak but I like the filet mignon because you don't need a lot and it is so tender.

Ingredients For massaman beef curry

  • 1 lb
    filet mignon or rib eye steak cut into thin strips
  • 2 Tbsp
    vegetable oil
  • 4 clove
    garlic minced
  • 3 Tbsp
    massaman curry paste
  • 1 can
    coconut cream or milk
  • 2 c
    beef stock
  • 2 Tbsp
    palm sugar
  • 2 lg
    potatoes peeled and cubed
  • 1 lg
    carrot cut into small cubes
  • 1 Tbsp
    fish sauce
  • handful of thai basil chopped

How To Make massaman beef curry

  • 1
    Heat a wok or large pot and add the oil. Sear the steak on all sides then remove it to a dish and set aside.

    Saute the garlic with the curry paste until fragrant. Add the beef stock, coconut cream, and sugar. Bring to a boil. Reduce heat to a simmer and add the potatoes, carrots, and fish sauce. Cook until potatoes are done. Add the Thai Basil and steak.

    Serve alone or with rice
