louisiana gumbo
I was originally taught this recipe from a friend from Louisiana. Over the years, I have tweaked it to make it my own recipe. One thing to note - it's hard to make a little Gumbo, so this is great to serve guests!

Ingredients For louisiana gumbo

1 pkgsmoked sausage, sliced

1 lbchicken legs

1 lbsnow crab legs

2 lblarge shrimped, peeled and deveined

1 lgonion, chopped

1 mdgreen bell pepper, chopped

2 stalkcelery, chopped

2 Tbspbay leaves, crushed

1 tspsalt

1 tspblack pepper

2 Tbspground thyme

2 Tbspdried basil

1 tspdried parsley

1 tspgarlic powder

2chicken bouillon cubes

2 Tbspgumbo file

1 pkgokra, frozen
- ROUX
-
1 Tbspshortening
-
1/4 cflour
How To Make louisiana gumbo

1Cook chicken, sausage, vegetables (except okra), and seasonings with enough water to cover for one hour.

2Add remaining ingredients, except frozen okra and cook an additional 30 minutes.

3Make roux* of flour & shortening and add to gumbo.

4Add okra and cook additional 5 minutes.

5Serve with white rice.
