I wanted a non-cream potato soup that was flavorful and hearty. The bacon, chives and sour cream did the trick. Even my husband, who dislikes any sort of potato soup, thought it was delicious! You could add cheese if you like, but without it, the bacon and chive flavors really come through.

Ingredients For loaded potato bacon soup

  • 4
    medium potatoes, peeled and cubed
  • 1/2
    onion, chopped
  • 4 c
    chicken broth
  • 2 Tbsp
    oil or butter
  • 1 stick
    celery
  • 4 slice
    bacon, cooked and crumbled
  • 1/2 c
    sour cream
  • 2 clove
    minced garlic
  • 1 tsp
    salt
  • 1/4 tsp
    pepper
  • 6-8 sprig
    fresh chives

How To Make loaded potato bacon soup

    Heat oil in large saucepan on medium heat. Add onions, potatoes, garlic and celery. Cook until onions are transparent.

    Add chicken broth, salt and pepper. Cover and simmer on low until potatoes are soft. (1 hour or so.) Mash coarsely with potato masher. Continue heating uncovered until smooth and thick.

    Fill serving bowls 1/2 full of soup. Add 2 T bacon and 2-3 T sour cream to each bowl and stir. Snip chives to garnish.
