Kielbasa - it's a staple at our house. There are a lot of ways to use it and they are all delicious. This soup is comfort food and it was born from leftovers the first time we made it. It's fast, warm, hearty and very tasty. Serve it alone or with a small green salad. Adding some biscuits is a bonus!

Ingredients For kielbasa vegetable soup

  • 1/2
    of a beef kielbasa sliced into small bite size pieces
  • 1 Tbsp
    butter
  • 1/2 c
    yellow or white onion, chopped
  • 1 stalk
    celery, thinly sliced
  • 1 tsp
    minced garlic, more to taste
  • 2 c
    beef or vegetable broth
  • 1 - 2 c
    potatoes, peeled and small dice
  • 1
    carrot, thinly sliced or diced
  • 1/2 c
    whole kernel corn
  • 1/4 c
    cooked green beans, chopped
  • 1/2 tsp
    Italian seasoning
  • 7 1/2 oz
    canned navy or other white bean, drained and rinsed
  • 1/2 c
    milk or half and half
  • 1/3 c
    shredded cheddar cheese, sharp or medium
  • snipped chives, for garnish
  • salt and pepper, to taste at serving time

How To Make kielbasa vegetable soup

  • 1
    In a large pot, sauté the sliced kielbasa over medium heat until browned. Remove and set aside.

    In the same pot, add the butter, chopped onion, celery, and garlic. Sauté until the onion is translucent.

    Add the beef broth, remaining vegetables, and seasonings. Bring to a boil, then reduce heat to a simmer.

    Cook for about 15-20 minutes or until the potatoes and vegetables are tender.

    Stir in the browned kielbasa and beans then cook for another 5 minutes.

    Add the milk and cheese stirring until combined. Serve hot, garnished with snipped chives.
