kielbasa vegetable soup
Kielbasa - it's a staple at our house. There are a lot of ways to use it and they are all delicious. This soup is comfort food and it was born from leftovers the first time we made it. It's fast, warm, hearty and very tasty. Serve it alone or with a small green salad. Adding some biscuits is a bonus!

Ingredients For kielbasa vegetable soup

1/2of a beef kielbasa sliced into small bite size pieces

1 Tbspbutter

1/2 cyellow or white onion, chopped

1 stalkcelery, thinly sliced

1 tspminced garlic, more to taste

2 cbeef or vegetable broth

1 - 2 cpotatoes, peeled and small dice

1carrot, thinly sliced or diced
-
1/2 cwhole kernel corn
-
1/4 ccooked green beans, chopped
-
1/2 tspItalian seasoning
-
7 1/2 ozcanned navy or other white bean, drained and rinsed

1/2 cmilk or half and half
-
1/3 cshredded cheddar cheese, sharp or medium
-
snipped chives, for garnish

salt and pepper, to taste at serving time
How To Make kielbasa vegetable soup

1In a large pot, sauté the sliced kielbasa over medium heat until browned. Remove and set aside.

2In the same pot, add the butter, chopped onion, celery, and garlic. Sauté until the onion is translucent.

3Add the beef broth, remaining vegetables, and seasonings. Bring to a boil, then reduce heat to a simmer.

4Cook for about 15-20 minutes or until the potatoes and vegetables are tender.

5Stir in the browned kielbasa and beans then cook for another 5 minutes.

6Add the milk and cheese stirring until combined. Serve hot, garnished with snipped chives.
