My husband loves spicy soups. This little treasure is for him; garnished with cheese, parsley, and hot pepper flakes, just the way he likes it. This hearty soup makes a satisfying lunch or dinner; when served with fresh fruit and salad. Don't forget a nice soft bread to sop up the juices.

- MEATBALLS

1 lbhot Italian sausage, casings removed

2 tspextra virgin olive oil
- SOUP

1 Tbspsalted butter

1/2 cdiced sweet onions

1/4 cdiced celery

1/4 cdiced sweet red pepper

1/3 cdiced carrots

1 tspfine sea salt

1/2 tspfreshly ground black pepper

3 clovegarlic, finely minced

26 ozfinely chopped tomatoes (mutti) 796 ml

4 cchicken broth

3/4 cpasta, bow tie

1/2 ccanned Romano beans, drained, rinsed

2 tspfresh oregano, roughly chopped

2 sprigfresh thyme, roughly chopped

2 tspfresh basil, roughly chopped

1 tspfresh tarragon, roughly chopped

1/2 tspred pepper flakes
- GARNISH

1/2 cshredded Pecorino cheese

How To Make jer's spicy sausage meatball soup

1Meatballs - Pinch off a half a tablespoon-sized chunk of sausage meat and roll into small balls.

2Next place a large cooking pot over medium heat. When hot add olive oil and brown the meatballs in batches. When the meatballs are evenly browned remove them from the pot and set aside until needed.

3Soup - In the same pot you browned the meatballs, add the butter and sauté the onions, celery, red peppers, and carrots until soft; about 5 minutes.

4Then add the salt, pepper, sugar, and garlic to the pan and cook for 1 minute until fragrant.

5Add the tomatoes and chicken broth and bring to a simmer for about 15 minutes.

6Next add the meatballs, pasta, beans, herbs, and red pepper flakes. Cook for 35 - 45 minutes until pasta is tender and meatballs are cooked.

7Serve garnished with cheese and parsley. Red pepper flakes are optional. Hope you enjoy.
