Ingredients For japanese shrimp noodle bowl

1/4 csoy sauce

2 Tbspsugar

2 Tbspmirin

8 ozudon noodles cooked according to directions

1/4 lbshrimp peeled and deveined

8 ozshiitake mushrooms stemmed and thinly sliced

3scallions sliced

1Combine all the ingredients for the broth in a pot and bring to a boil. Remove from heat and reserve.

2In a large pot place the cooked Udon noodles. Top with the shrimp scallions and mushrooms. Pour the broth over top and cover the pot. Bring to a simmer and simmer 4 minutes.

3Crack the 4 eggs in different spots in the pot. Replace the lid and simmer about 4 more minutes. Serve immediately.
