This is so good. My family from out of town always went to a local Italian place to get this soup. Now they ask me to make it for them when they visit. This is my recipe.

Ingredients For italian wedding soup

    egg
  • 3/4 c
    grated parmesan cheese
  • 1/2 c
    dry bread crumbs
  • 1 sm
    onion, chopped
  • 3/4 tsp
    salt, divided
  • 1-1/4 tsp
    pepper, divided
  • 1-1/4 tsp
    garlic powder, divided
  • 2 lb
    ground beef
  • 2 qt
    chcken broth
  • 1/3 c
    chopped fresh sminach
  • 1 tsp
    onion powder
  • 1 tsp
    dried parsley flakes
  • 1-1/4 c
    cooked medium pasta shells or spirals

    In a large bowl, combine the egg, cheese, bread crumbs,onion

    1/4 teaspoon pepper

    Crumble beef over mixture and blend well

    Shape into 1-inch balls

    In a dutch oven, cook meatballs in small batches until no longer pink; drain

    Add broth, spinach, onion powder, parsley and remainging salt, pepper and garlic powder

    Bring to a boil.

    Reduce heat; simmer uncoveed for 5 minutes

    Stir in pasta; heat through until posta is tender.
