I first had this soup in a cafeteria at my job was a little skeptical at first because it came from a bag which was frozen and thawed and heated. I loved it and tried to make it on my own and this is what I came up with.. My family loves it. Its so easy to make.

Ingredients For italian wedding soup

  • 1 lb
    lean ground beef
  • 2 1/2 qt
    chicken broth
  • 2 c
    baby spinach
  • 3/4 c
    diced carrots
  • 2
    eggs
  • 1/4 c
    bread crumbs
  • 2 Tbsp
    parmesan cheese
  • 1 tsp
    dried basil
  • 1 tsp
    minced onion
  • 1 c
    sea shell pasta

How To Make italian wedding soup

    put chicken broth into a stock pot and boil
  • 2
    dice carrots and add to boiling chicken broth wash and chop spinach and put aside
  • 3
    in a large bowl combine ground beef, bread crumbs,parm cheese ,basil,minced onion make into small bite sized meatball
  • 4
    add meatballs and seashell pasta to the boiling chicken broth meatballs are done when they start to float pasta should be cooked to your liking add spinach when it wilts its done serve with warm bread
