This is one that the neighbors go crazy when I make it and the scent floats out to the street. Lovely dish to come home to.

Ingredients For irish lamb stew

  • 2 lb
    lamb stew meat, 1 inch dice
  • 1 3/4 lb
    white potatoes cut into 1 inch pieces, peeled(optional)
  • 3 lg
    leeks, whites only, halved, washed and thinly sliced
  • 3 lg
    carrots, cut into 1 inch pieces, peeled(optional)
  • 3 stalk
    celery, thinly sliced
  • 14 oz
    can reduced sodium chicken broth
  • 2 tsp
    chopped fresh thyme
  • 1 tsp
    salt
  • 1 tsp
    freshly ground pepper
  • 1/4 c
    fresh parsley leaves chopped
  • 1/2 c
    frozen green peas

How To Make irish lamb stew

  • 1
    Combine all ingredients except parsley and peas in a 6 qt slow cooker. Put lid on an cook until fork tender, about 8 hours

    Add peas, cook on high for 20 minutes

    Stir in parsley and serve with crusty bread
