Ingredients For irish lamb stew

2bay leaves

3potatoes, chopped

1/2 cwater

1/2 call purpose flour

1 cwhite wine

4 cbeef stock

4 ccarrots, diced

1 lgonion, chopped

2 lgonion, diced

1 1/2 lbbacon, thickly sliced and diced

3 clovegarlic, minced

6 lblamb shoulder, boneless

1/2 tspsalt

1/2 tsppepper

1 tspthyme, dried

2 tspwhite sugar
How To Make irish lamb stew

1Cook bacon in large, deep skillet. Cook over medium-high till evenly brown. Drain and crumble then set aside.

2Put lamb, salt, pepper, and flour in large mixing bowl. Toss to coat meat evenly. Brown meat in frying pan with bacon fat/grease.

3Put meat into crock pot (leave 1/4 cup of fat in frying pan) Add garlic and yellow onion and saute till onion is golden. Deglaze frying pan with 1/2 cup of water and then add garlic-onion mix to crock pot with bacon pieces, beef stock, and sugar. Cover and simmer for 1 1/2 hours.

4Add carrots, onions, potatoes, thyme, bay leaves, and wine. Reduce heat, simmer 20 minutes or until tender.
