ham and potato soup
This came about because I was feeling lazy and didn’t want to go out to the store. I had some ham in the freezer from the holidays and everything else on hand.

Ingredients For ham and potato soup

5 cwater

2 tspchicken base (better than bouillon)

1/2 cchopped onion

1/2 cdiced carrots

2red potatoes, cubed (no need to peel)

2 ccooked ham, cubed

1bay leaf
-
1/2 tspground black pepper
-
2 Tbspdried parsley flakes

1 tspmild curry powder
-
1 pkg(4.1 oz) instant mashed potatoes (idahoan)

1 cmilk
-
2 ccheddar cheese, shredded

salt, to taste
How To Make ham and potato soup

1In a large dutch oven, add water, chicken base. onion, carrots and potatoes. Bring to a boil; reduce to a simmer.

2Add ham, bay leaf, pepper, parsley and curry powder. Cover and simmer 30 minutes. Remove bay leaf.

3Add instant potatoes and stir. Cook 5 minutes.

4Add milk and cheese and continue cooking, stirring often, until heated through. Add salt, if needed.
