3 Tbspolive oil

1/4 ccashews, unsalted

1/4 cyogurt, plain and non-fat

1/2 tspsalt

1/2 ccoconut milk, unsweetened

1 smred pepper, hot

1 Tbsphoney

2 cvegetable broth
-
1/2 lbboiling potatoes, diced

1 mdgreen bell pepper, seeded and chopped

1.5 lbgreen tomatoes, peeled, chopped and seeded

2 tspcumin, ground
-
1 tspcoriander, ground
-
1garlic clove, minced
-
1 tspginger, freshly minced

1 cyellow onions, chopped

4 tspcilantro, fresh and chopped
How To Make green tomato soup with garlic, ginger, cumin

1In a large heavy pot, heat the oil over medium heat, then add the onions, ginger, garlic, coriander, and cumin and cook, stirring, until the onions are soft and translucent, about 5 minutes.

2Add the tomatoes, bell pepper, potatoes, broth, honey, and hot pepper; bring to a boil, reduce the heat to low, and simmer, covered, for 30 minutes.

3Remove the hot pepper.

4Using a blender or food processor, puree the soup in batches; return it to the pot, stir in the coconut milk (or you can use skim milk) and salt, then heat just to a simmer.

5Serve, garnished with dollop of yogurt, cashews, and cilantro.
