I don't know where this recipe originated but I asked an old coworker Ann Lorr for it. She used to bring it for lunch and it would smell so good I had to ask he for the recipe.

Ingredients For green chili stew from the palace

  • 3 lb
    stew meat, cubed
  • 3 Tbsp
    vegetable oil
  • 3 lb
    roasted green chilies
  • 3
    potatoes, cubed
  • 1 tsp
    cumin
  • 1 tsp
    oregano
  • 2
    cloves garlic, minced
  • 1 qt
    vegetable broth
  • salt and pepper, to taste

How To Make green chili stew from the palace

    Saute the beef, which has been cut in one-half inch squares, until brown.

    Add the flour, oregano, cumin and garlic and broth and bring to a boil. Place on low heat and simmer 30 minutes.

    Add potatoes and simmer for 40 minutes more.

    Add salt and green chilis and cook for 10 minutes more.
  • 5
    Serve with white flour tortillas.
