Ingredients For gorgeous gazpacho

2-3 lbtomatoes, peeled, seeded and diced

2 ctomato juice

3-4 clovegarlic, peeled

2cucumbers (6 in a piece)

2-3jalapenos, seeded
-
1 cbeef or chicken stock
-
1/2 cfresh basil, julienned
-
1/4 cevoo
-
1/3 croasted red pepper
-
1/3 cred onion
-
3 slicebread
-
1 tspeach, cumin, salt, pepper

1/3 csour cream or regular heavy cream

1/4 cred wine vinegar
How To Make gorgeous gazpacho

1Peel, seed and dice the tomatoes and place in a large bowl.

2Add garlic, one cucumber (peeled and seeded), the chiles (seeded if desired), and red onion to a blender and puree

3Add puree to the tomatoes.

4Dice the other cucumber and add the tomato mixture. Add chopped red pepper and basil as well.

5Add bread to the blender with the tomato juice and puree. Add to the tomato mixture.

6Add the oil, vinegar and spices. Mix well. Add as much stock as you desire to reach the consistency you wish. Add the cream and mix.

7Refrigerate for several hours to chill thoroughly.

8NOTE: to really make this special as an appetizer soup for an important occasion, float tiny cooked shrimp around the perimeter of the bowl and place a smidgen of caviar in the center of each.
