easy gumbo

This is my version of Gumbo. Simple & easy, but delicious. Even easier if you use a rotisserie chicken from your supermarket. I hope you enjoy.

Ingredients For easy gumbo

1 pkgkeilbalsa smoked sausage

2 ccooked & shredded chicken

2 clarge frozen shrimp, thawed

1onion, chopped
-
1 pkgfrozen cut okra

1 canro tel tomatoes
-
1 canstewed tomatoes
-
4 canchicken broth
-
2 cminute rice
-
1/2 tspcayenne pepper
-
2 tspminced garlic
How To Make easy gumbo

1Cut sausage into 1/4 inch pieces. Place sausage & onion in soup pot with a little oil & stir fry a few minutes until sausage is browned & onions are tender.

2Add chicken broth & rice to pot. Bring to a boil for about 10 minutes.

3Add tomatoes, okra, chicken, cayenne pepper & garlic. Mix together well. Simmer for about 10-15 minutes. Add more garlic or cayenne if you want more. Also, add more chicken broth if you want it more soupy.

4Stir in thawed shrimp. Let simmer 5-10 minutes. NOTE: I use the precooked shrimp. If you cook shrimp too long, it will be rubbery. Taste even better as leftovers the next day. Yummy with cornbread, hushpuppies or hoe cakes.
