Ingredients For easy and delicious mexican cheese soup

  • 1 lb
    ground beef, chicken or turkey
  • 1 lg
    onion, chopped fine
  • 1 lb
    velveeta cheese, cut into cubes
  • 1 can
    15-ounce size whole kernel corn (i used about 1 1/2 cups frozen corn)
  • 1 can
    15-ounce size black beans, undrained
  • 1 can
    10-ounce size rotel tomatoes
  • 1 can
    14.5-ounce size petite diced tomatoes
  • 1 pkg
    taco seasoning mix
  • 2 c
    beef broth

How To Make easy and delicious mexican cheese soup

  • 1
    Brown ground beef and onion in a skillet. Drain and add to dutch oven. Add cheese and remaining ingredients and stir well.

    Cook on low to medium heat for about 10 minutes or until heated through and cheese is melted.

    Serve with crusty bread, tortilla chips or cornbread.
