Ingredients For dashi stock

  • 3 lg
    pieces of kombu wiped with a damp paper towel
  • 2 qt
    water
  • 3 c
    bonito flakes

How To Make dashi stock

  • 1
    Place the kombu in the water in a large stock pot. Let sit 6 hours or overnight. Place on stove and bring to a boil. Reduce the heat to simmer and remove the kombu
  • 2
    Gently add the bonito flakes and let simmer 10 minutes. Strain through fine mesh strainer. Discard the flakes.
