Ingredients For dashi stock

3 lgpieces of kombu wiped with a damp paper towel

2 qtwater

3 cbonito flakes
How To Make dashi stock

1Place the kombu in the water in a large stock pot. Let sit 6 hours or overnight. Place on stove and bring to a boil. Reduce the heat to simmer and remove the kombu

2Gently add the bonito flakes and let simmer 10 minutes. Strain through fine mesh strainer. Discard the flakes.
