1 Tbspmirin

4 Tbspdark soy sauce

2tuna steaks about 4 oz each
- NOODLES

6 ozrice noodles cooked according to package directions.
- BROTH

6 cwater
-
1/4 ozdashi stock powder
-
2 Tbspmirin
-
4 Tbspdark soy sauce
- VEGGIES

1 Tbspolive oil
-
4 clovegarlic minced
-
1 lgcarrot thinly sliced

4scallions sliced into 1 inch lengths

1 cnapa cabbage shredded
-
1 cspinach leaves
How To Make dashi noodle soup with tuna

1Mix the marinade ingredients together and add the tuna steaks and brush the marinade all over them. Set aside for 1 hour. After an hour slice the tuna steak intl 1/4 inch pieces set aside.

2Cook noodles and drain. Set aside.

3Place the water, dashi stock, mirin and soy sauce together and simmer over med. heat.

4Add oil to a wok. Stir fry the garlic, carrots, scallions and cabbage for 2 minutes. Stir in the spinach

5To assemble place noodles in the bottom of a bowl. Top with half the veggie mixture. Place the sliced raw tuna on top.

6Pour the hot broth over top. This will cook the tuna just enough to be rare but warm.
