Ingredients For dashi noodle soup with tuna

  • MARINADE
  • 1 Tbsp
    mirin
  • 4 Tbsp
    dark soy sauce
  • 2
    tuna steaks about 4 oz each
  • NOODLES
  • 6 oz
    rice noodles cooked according to package directions.
  • BROTH
  • 6 c
    water
  • 1/4 oz
    dashi stock powder
  • 2 Tbsp
    mirin
  • 4 Tbsp
    dark soy sauce
  • VEGGIES
  • 1 Tbsp
    olive oil
  • 4 clove
    garlic minced
  • 1 lg
    carrot thinly sliced
  • 4
    scallions sliced into 1 inch lengths
  • 1 c
    napa cabbage shredded
  • 1 c
    spinach leaves

How To Make dashi noodle soup with tuna

    Mix the marinade ingredients together and add the tuna steaks and brush the marinade all over them. Set aside for 1 hour. After an hour slice the tuna steak intl 1/4 inch pieces set aside.

    Cook noodles and drain. Set aside.

    Place the water, dashi stock, mirin and soy sauce together and simmer over med. heat.

    Add oil to a wok. Stir fry the garlic, carrots, scallions and cabbage for 2 minutes. Stir in the spinach

    To assemble place noodles in the bottom of a bowl. Top with half the veggie mixture. Place the sliced raw tuna on top.

    Pour the hot broth over top. This will cook the tuna just enough to be rare but warm.
