I have seen various soup recipes using smoked sausage and potatoes. I combined ingredients from a few to come up with this one. You can add or subtract any ingredients according to your taste.

Ingredients For crock-pot sausage and potato soup

12 oz pkghillshire farms beef lil smokies, halved

6-8 smred potatoes quartered,

2 Tbspminced garlic

2ribs celery, sliced

1 pkgdry onion soup mix

1 cancondensed cream of mushroom soup

1 mdred bell pepper, seeded and diced

1 can14.5 ounces; diced tomatoes, undrained

1 can15.25 ounces corn, drained

4 cchicken broth
-
1 tspdried thyme
-
1 tspsalt
-
1 tspfreshly ground black pepper
How To Make crock-pot sausage and potato soup

1Place cut sausage, potatoes and vegetables into crock pot.

2Combine chicken broth, dry onion soup mix, and cream of mushroom soup. Mix well to combine all ingredients.(What I did was stir together the mushroom and dry onion soup using just about 1/2 of the chicken broth to dissolve the dry soup base and thin out the mushroom soup and then added the remaining chicken broth) Pour over vegetables and sausage in crock pot.

3Cook on Low for 6-8 hours or High for 3-4 hours. **OPTIONAL: approx 5 minutes before serving you may stir in 1/2 cup sour cream.
