Ingredients For corn, tomato & summer squash soup

1 Tbspolive oil

2garlic cloves, finely chopped

1 lgonion, chopped

5 cchicken broth

4 mdtomatoes, chopped

2 ccorn, fresh

1 Tbspchiles, canned and mild

4 mdzucchini, thinly sliced

1/2 cbasil, fresh chopped
How To Make corn, tomato & summer squash soup

1In a large deep pot, heat oil; add garlic and onion; saute until softened.

2Add chicken broth, tomatoes, corn and chile and simmer for 15 minutes.

3Add zucchini and basil; simmer for 5 minutes longer.

4Serve hot, passing garnishes of sour cream and cilantro, if desired.
