Ingredients For consommé with mushrooms

4 ozdried shiitake mushrooms

6 cchicken stock

4 cclam juice

2 mdshallots, chopped

1 Tbspsoy sauce

1lemon, zested
How To Make consommé with mushrooms

1Place the dried mushrooms in a bowl. Boil water and pour it over the mushrooms, making sure they are covered. Let it sit for 20 minutes.

2Strain and reserve one cup of the liquid.

3Combine the chicken stock, clam juices, shallots, garlic, soy sauce, and reserved mushroom liquid. Simmer for 20 minutes.

4Strain the consommé, reserving the mushrooms.

5Ladle the consommé into bowls, and add some zest of the lemon. Then add the mushrooms back in.
