My ex-sister-in-law gave me this recipe over four decades ago. It's quite versital. Sometimes I'll add more potato or onions and less water. Can easily be doubled. Tweak it to your tastes. Like most great soups, it's better the second day. Enjoy!

Ingredients For connie's potato soup

3 Tbspbutter

1 cdiced onions

3 ccubed potatoes

1carrot- grated

2 cwater
-
small amount of flour and water mixture

2 tspsalt

1/2 tsppepper

3 cmilk

3 Tbspparsley flakes

1/2 csour cream (optional
How To Make connie's potato soup

1Gather ingredients.

2Peel and dice potatoes and immediately put into cold water.

3Melt butter in pan.

4Brown onions.

5Add butter, onions,carrots, water, salt & pepper to potatoes.

6Cook over low heat for 20 minutes until potatoes are cook through.

7Mix together a small amount of flour and water. Add this slurry to potatoes.

8Stir in milk and parsley and bring to the boiling point. Turn off heat.

9Option step: Garnish with sour cream.
