Ingredients For classic french onion soup

  • 10
    onions, thinly sliced
  • 2 Tbsp
    butter, melted
  • 1 Tbsp
    sugar
  • 8 c
    vegetable broth
  • 2 Tbsp
    brandy or cognac
  • 1 tsp
    each of salt and pepper
  • 12
    baguette slices
  • 2 c
    shredded swiss cheese

How To Make classic french onion soup

  • 1
    In a medium to large slow cooker, combine onions and butter. Toss well and cover. Cook on high for 1 hour.

    Add sugar. Stir. Fold a clean tea towel in half over top of crock pot to absorb moisture. Cook on high for 4 hours, stirring two or three times, replacing towel.

    Remove towel and add broth, brandy and seasoning. Stir well. Cook on high for 2 more hours.

    Preheat broiler. Ladle soup into 6 ovenproof bowls. Place 2 bread slices in each bowl and sprinkle with cheese. Broil 2 to 3 minutes. Serve hot.
